Nộm Đu Đủ (Green Papaya Salad) – A perfect balance of sweetness, sourness and spice

It’s not hard to spot nộm đu đủ, or green papaya salad, in a traditional Vietnamese New Year’s feast. With its crisp texture and refreshing flavor, this dish brings perfect balance to rich meaty festive foods like thịt mỡ (Braised pork belly) and bánh chưng (Square sticky rice cake). For its ersatile and light nature, it can be enjoyed as a refreshing appetizer, a quick lunch, or a side dish. Across Vietnam, nộm đu đủ have different variations influenced by geography and culture. In the North, nộm đu đủ is most commonly paired with dried beef or pig’s ear. Shredded green papaya is mixed with fragrant herbs like basil and mint, then tossed in a sweet-and-sour fish sauce dressing that soaks into every strand. The result is a dish so full of flavor and balance that after one bite, you could never go back.

Ingredients (Serves 2–3) 

  • Carrot: 1/2 
  • Roasted peanuts, crushed: 1/2 cup 
  • Seasonings: Salt, sugar, vinegar, lime, garlic, chili 
  • Herbs: Vietnamese balm, basil, coriander

Instruction:

Step 1: Prepare the vegetables 

Lightly score or make small shallow cuts on the surface of the green papaya to release the sap. Rinse well, peel, remove the seeds, and shred finely. Wash and peel the carrot, then shred it as well. 

Step 2: Soak to remove sap and improve crunchiness 

Place the shredded papaya and carrot in a bowl of lightly salted water. Soak for about 30 minutes to remove the sticky sap and make them crispier. After soaking, rinse thoroughly, squeeze out the excess water, and gently separate the strands. 

Step 3: Make the dressing 

The dressing can be adjusted to your taste. This is my favorite formula: in a small bowl, mix together: 

  • 1 tbsp lime juice 
  • 2 tbsp white vinegar 
  • 3 tbsp sugar 
  • 1/2 tbsp salt 

Stir until the sugar and salt are completely dissolved, then add minced garlic and chili to taste. 

Step 4: Combine and marinate 

Pour the dressing over the papaya and carrot. Mix well and let sit for 6–8 minutes so the vegetables can absorb the flavors. Squeeze out any excess liquid, taste, and adjust the seasoning if needed. 

Step 5: Finish and serve 

Gently toss the papaya and carrot again to loosen the strands. Add chopped herbs and crushed roasted peanuts, then mix well. You can also add optional toppings such as dried beef, garlic-fried beef liver, or crispy pork skin for extra flavor and texture.
